Ingredients:
1 x 420g can of creamed corn
1 cup plain flour
3/4 cup corn meal
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1/2 cup milk
2 large eggs beaten
2 tbsp chopped coriander
1 chili chopped (optional)
1 cup grated cheese
1 tsp smoked paprika
4 tbsp melted butter
Method:
- In a large bowl, add the creamed corn, beaten eggs, milk, melted butter, paprika, salt, chili, coriander, and cheese, and mix with a wooden spoon.
- Next, add the flour, corn meal, baking powder and baking soda, and mix again, to form a batter.
- Pour the batter into a greased and lined 8 inch square baking dish.
- Bake the Mealie bread in a preheated oven, at 180 degrees Celsius until cooked through, and slightly browned on top.
- Once baked, allow the Mealie bread to cool, and then cut it into squares, and serve!
