Mealie Cake (South African Corn Bread)

Ingredients:

1 x 420g can of creamed corn

1 cup plain flour

3/4 cup corn meal

2 tsp baking powder

1/2 tsp baking soda

1 tsp salt

1/2 cup milk

2 large eggs beaten

2 tbsp chopped coriander

1 chili chopped (optional)

1 cup grated cheese

1 tsp smoked paprika

4 tbsp melted butter

 

Method:

  1. In a large bowl, add the creamed corn, beaten eggs, milk, melted butter, paprika, salt, chili, coriander, and cheese, and mix with a wooden spoon.
  2. Next, add the flour, corn meal, baking powder and baking soda, and mix again, to form a batter.
  3. Pour the batter into a greased and lined 8 inch square baking dish.
  4. Bake the Mealie bread in a preheated oven, at 180 degrees Celsius until cooked through, and slightly browned on top.
  5. Once baked, allow the Mealie bread to cool, and then cut it into squares, and serve!
