Shortbread cookies

Ingredients:

250 g butter, softened

½ cup caster sugar

3 cups plain flour

1 tsp vanilla essence

 

Method:

  1. Using an electric mixer, cream the butter and caster sugar, until pale in colour and fluffy.
  2. Add in the vanilla essence, and mix to combine.
  3. Add in the flour, a little at a time, until the dough comes together.
  4. Once the dough had formed, shape it into a ball, and place it in the fridge for 30 mins till firm.
  5. Roll the dough out between two sheets of baking paper, and cut into shapes using a cookie cutter of your choice.
  6. Bake in a preheated oven at 180 degrees Celsius until golden brown.
  7. Decorate your cookies with a dusting of icing sugar, or, cover in fondant or royal icing.

 

 

*** Do you have some dried fruit and nuts in your pantry? Give these variations a go:

  1. Hazelnut Chocolate Shortbread : (add 1 cup of crushed hazelnuts to the dough, and mix them in well. Roll and cut the dough into desired shapes and bake, as per the instructions. Once baked and cooled, dip one end into melted chocolate, and then refrigerate, to let the chocolate set. Once the chocolate is set, serve the cookies with your favourite warm drink!
  2. Date and Coconut : (add 1/2 cup of desiccated coconut, and  1/2 cup chopped dates  to the dough, and mix them in well. Roll and cut the dough into desired shapes and bake, as per the instructions. Once baked and cooled, drizzle the cookies with  melted chocolate, and then refrigerate, to let the chocolate set. Once the chocolate is set, serve the cookies with your favourite warm drink!
  3. Apricot, Pistachio and White Chocolate : (add 1/2 cup of chopped pistachios, and 1/2 cup of chopped dried apricots to the dough, and mix them in well. Roll and cut the dough into desired shapes and bake, as per the instructions. Once baked and cooled, dip one end into melted white chocolate, and then refrigerate, to let the chocolate set. Once the chocolate is set, serve the cookies with your favourite warm drink!
