Ingredients:
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla bean extract
2 large eggs lightly beaten
1/2 cup water
2 1/2 cups plain flour
2 1/2 tsp baking powder
2 cups caster sugar
1 tsp salt
Method:
- Combine wet ingredients in a bowl and give them a light whisk till combined.
- Sift the dry ingredients into a separate bowl.
- Using an electric mixer, combine the wet ingredients into the dry ingredients while beating on low speed until all the ingredients are combined.
- Pour the batter into prepared and lined cupcake pans and bake in a pre-heated oven at 180 degrees celcius for approximately 15-20 mins until golden brown and cooked through.
